Chocolate Zucchini Muffins

Rebel Chocolate Zucchini Muffin Mix
2 eggs
1/2 cup vegetable oil or melted butter slightly cooled
1 teaspoon vanilla
1 cup shredded Zucchini, squeezed to release liquid

Preheat oven to 350 degrees. Grease 12 muffins cups. Mix eggs vegetable oil, vanilla and squeezed zucchini in a bowl with a whisk until combined. Add in Mix Packet and mix with a rubber spatula until no dry flour remains. Scoop evenly into the greased muffin cups. Bake at 350 degrees for 15-20 minutes, or until an inserted toothpick comes out clean.
