Candied CARROTS
You can and you should take something healthy and turn it into candy. Carrots are in my book the perfect vegetable, savory for dinner and sweet for dessert. I fist made candied carrots when I wanted to decorate my carrot cake. I ended up eating half of them before the cake was even frosted. My bad.
Serves 1 cake and a few test tastes
2 scrubbed medium carrots,
2-4 tablespoons sugar
¼ cup water
Slice carrots 1/8 inch thick with a mandolin. In a medium skillet, combine the carrots, 2 tablespoons of sugar and water. Bring to a simmer, stirring occasionally. Cook carrots until they are soft. Turn up the heat to medium and cook until the liquid is reduced and becomes thick like syrup. Note: if the syrup starts to color, remove from heat. Stir constantly. When completed, spread out onto a parchment lined baking sheet. Once cooled, toss in more sugar.
