Brown Butter and Garlic Roasted Carrots

Ingredients

2 lbs carrots
1 stick butter
3 tablespoons honey
3 garlic cloves
salt and pepper to taste

Preheat oven to 425 degrees. In a saucepan add butter and cook over medium-high heat. Continue to whisk for a few minutes until the butter starts to become frothy and brown, scrapping the brown bits off the bottom. Quickly pour butter into a bowl to stop the browning, as butter can burn easily. Stir in the honey and garlic.

Spread the carrots out on a large baking sheet. Drizzle the brown butter sauce over the carrots and toss coating evenly. Add salt and pepper to taste.

Bake for 15-20 minutes or until carrots are tender. (see note) Garnish with parsley and serve immediately.
