Baked Parmesan Yellow Squash Rounds

 

Ingredients

2 medium sized yellow summer squash, sliced into 1/4-inch rounds
1/4 teaspoons each of garlic and onion powder
salt and pepper
1/2 cup freshly grated parmesan cheese

Preheat the oven to 425 degrees. Line a baking sheet with parchment paper or lightly grease. Arrange the sliced squash onto the prepared pans leaving little or no space in-between them. Lightly sprinkle the squash with garlic and onion powder, and the salt and pepper. Use a spoon to spread a thin layer of Parmesan cheese on each slice of squash.

Bake for 15-20 minutes until the parmesan is golden brown. Serve immediately.
